Lemon Protein Balls
Soak the Cashews in some water for at least an hour or two (until they soften and bloat a little). Drain them off when finished.
Place the flaxseeds, soaked and drained cashews, lemon rind & desiccated coconut into a food processor. Blend until smooth. Add a little water if too thick. Try not to over-blend the mixture if you are using a high powered processor or you may end up with a butter as opposed to a mix you can roll into balls. if you go too far, add more coconut to thicken the mix.
Add the sweetener of your choice and lemon juice to taste. I like them really tangy so I use the choice of a whole lemon.
Using your hands shape the mixture into balls. Roll in coconut and place in the fridge to firm up a little. Eat and enjoy!!!
Freeze or store in fridge in airtight container
