Lemon Protein Balls

Yields10 Servings
 1 cup Raw Cashews
1 cup Desiccated Coconut (plus extra for rolling in)
 ½ cup Flaxseeds
Zest & the Juice of half a lemon (add more lemon if you like it tangy)
2 tbsp Honey or Mayple Syrup (or use Brown Rice Malt Syrup for Fructose Free)
½ tsp Concentrated natural vanilla extract
1

Soak the Cashews in some water for at least an hour or two (until they soften and bloat a little). Drain them off when finished.

2

Place the flaxseeds, soaked and drained cashews, lemon rind & desiccated coconut into a food processor. Blend until smooth. Add a little water if too thick. Try not to over-blend the mixture if you are using a high powered processor or you may end up with a butter as opposed to a mix you can roll into balls. if you go too far, add more coconut to thicken the mix.

3

Add the sweetener of your choice and lemon juice to taste. I like them really tangy so I use the choice of a whole lemon.

4

Using your hands shape the mixture into balls. Roll in coconut and place in the fridge to firm up a little. Eat and enjoy!!!

5

Freeze or store in fridge in airtight container
